Once you understand that the hillsides surrounding Château Favray are among the most advantageous for the development of aromas in wine thanks to their exposure and the very calcareous soil, you will also understand that the Sauvignon Blanc called Pouilly Fumé reigns as master.

Pouilly Fumé Château Favray expresses a floral nose. A marked minerality emphasizes an expressive fruitiness on the palate. Its liveliness unites with an elegant harmony. Although generally served young, it can be kept from 5 to 10 years depending on the vintage.

The 2015 vintage : Summer 2015 particularly hot and dry we were given a poor harvest but a rich wine. Typical aromas of excellent maturity, note pear, quince, very full mouth keeps all its elegance thanks to the mineral freshness so characteristic of Château Favray.

The 2016 vintage : The very low harvest of 2016 gave us a rich wine, floral aromas, ample mouth with aromas of ripe fruits like pear or quince. A beautiful freshness gives elegance and balance to this exceptional vintage.

Pouilly Fumé Château Favray can accompany all fish, in particular smoked salmon, shellfish and seafood, cold meats, white meats and certain cheeses.
