A pebbly white calcareous soil with little earth.
South to west hillside exposure.
The vineyard surface area is 16 hectares (45 acres).
Vinification :
Thermo-regulated temperature control for fermentation.
Matured on fine lees.
Kieselgur filtering.
Character analysis :
Dry white white
Sauvignon Blanc grape variety.
Alcoolic degre : 13.2 Acidity: 4.45g/l
Residual sugar: 0.4g/l
Tasting :
The 2015 vintage. Summer 2015 particularly hot and dry we were given a poor harvest but a rich wine. Typical aromas of excellent maturity, note pear, quince, very full mouth keeps all its elegance thanks to the mineral freshness so characteristic of Chteau Favray.
Fine Cooking :
The Pouilly Fume acute; Chteau Favray goes particularly well with shellfish, grilled and smoked fish, white meats, asparagus, and cheese, notably goat cheese.
Marketing :
The Pouilly Fum Chateau Favray is intended for fine dining establishments, specialty stores, and individual customers. Approximately 120 000 bottles are produced yearly.
